I’ve opted in for this feature, but having gone to the Wordlist, I cannot find a Help topic that explains how to do multiple parses, and I cannot work out how to do it when I’ve tried. Can someone tell me how?

Because we can not know if you want to add a new parse or change an existing one, the Wordlist will never create a new parse. To create a new parse, it will need to be created from the Interlinear.
