I just updated to 8.0.100.50 and would like to know what was updated. Is there a site that displays the changes made in the various updates?

No, sorry, there is no place that lists what was changed in updates. We’ve talked about it, but it’s mostly a problem with finding someone that has the time to do it for every release.

Most minor version increases (i.e. only the last number changes) are only various bug fixes. We try hard not to add new features into minor releases.

I understand from the palaso developers that libpalaso has been updated with the most recent ISO language codes. If the ... we might see it included in a Paratext 8 update?
